Cream of Tartar is a highly acidic powder made from scraping oak wine barrels after the wine has been bottled. You can substitute lemon juice or vinegar, but you have to increase the amount 3-5 times, which affects flavor. If you cut it with flour, you make baking powder. If you add salt to this mixture, you make baking soda. It is an ingredient in my favorite cookie, the snickerdoodle, but I can't find it here in Austria. Does anyone have any leads?
