to get an opportunity to meet the locals , learn their culture and language. to make friends and listen to lovely stories :) :) :)

We swam with the dolphins in the red sea . We also swam with Dudong (the sea cow), a huge mammal who lives inside the sea. Did helihike, bungy jump, paragliding, sky diving in new zealand. Traveled in the luggage train at late in the night, with just one compartment (wooden compartment) for sitting, having windows without glasses through the jungles of Srilanka, just to do the trek to "The World's End" Dived with Sharks and swam with Penguins in South Africa. We do this most of the times: book the to and fro tickets on skyscanner and land on a new country w/o any other planned booking. We go by the recommendations from the locals and keep our itinerary flexible.
