Back in London, UK after an awesome experience travelling SE Asia and living and working in MElbourne, Australia .. big shout The House of Sin, and The Quarry Rats! Couchsurfing in Melbourne is brilliant - and definately recommended.

Why I’m on Couchsurfing

HOW I PARTICIPATE IN COUCHSURFING

I've been lucky enough to surf a few great couches in Melbourne, Australia.. and really enjoyed the social experience.
I'm not able to host anyone - but happy to recommend good things to do in London or Melbourne.. meet ups / coffee and all that in London - arrange a party or two (I love all that!)

COUCHSURFING EXPERIENCE

I heard about CouchSurfing through a Brazilian flat mate while in London.. 'What a great idea!' I said!

I couch surfed at the start of my stay in Melbourne, and made some great friends - who I managed to meet and party with plenty of times, and we're still in touch now... couchsurfing.. so long as you have the right approach ... it really is a great idea and an awesome and rewarding way to meet new friends from around the globe - I'd recommend it to anyone

Interests

Now that would be an awful long list!! I'll give it a quick shot...

I'll give most things a go with an open mind - but some of the things I've already discovered I like to do are: Meeting new people, cooking for friends (especially on a BBQ!), Partying till the morning, Sleeping till the afternoon, Getting up and making the most of the day, lots and lots of sports both watching and playing, reading, dancing my socks off, learning new stuff, just kicking back and relaxing, really pushing myself, talking rubbish and tackling debates

One Amazing Thing I’ve Done

created a promotions company with a friend promoting independent club nights in London (door. promotions) which turned into our Friday night party 'Never Grow Up'

My favourite (pretty cheap if it's feeding a good group of you) Jerk Chicken, rice + pea Recipe ....

You will need...

Some Chicken (drumsticks and thighs work very well)
A Lemon

For the Dry Seasoning..
Black Pepper
Salt
Dried Thyme
All Purpose Carribean Seasoning (which should include cayenne pepper, sweet paprika and the all important ground all spice)
ground cinnamon (not too much!)

For the Wet Seasoning..
Scotch Bonnett Pepper (1 is sensible, 2 for the brave - and unless you really like your head blown off - take the seeds out and wash hands throughly!)
bunch of spring onions
a few cloves of garlic
an inch of fresh ginger
some fresh thyme if its available
Cider Vinager
Honey

For the Rice and Pea

White Rice
Nob of butter or little bit of oil
Tin of Coconut Milk
Beans - I like Bolltti beans best
some more dried thyme

....... How to prepare

The Chicken...
-Rinse the chicken and pat dry.
-Squeeze lemon juice over the chicken.
-Mix together all dry seasoning and rub all over chicken pieces.
-Chop finely and mash in pestle and morter all wet seasoning ingredients apart from cider vinegar and honey
-Add honey and cider vinegar and mix well - a magi mix is the most effeciant way to make the wet seasoning if available - just chuck it all in a whizz it up.
- Marinade the chicken pieces in the wet seasoning - best to leave for at least 20mins - up to 4 hrs or over night in the fridge if you have the time and patience.
-You can then cook the chicken in an oven or my favourite ... on the BBQ! Cook until piping hot, cooked through and the juices run clear.

For the Rice and Pea...

- Rinse rice well to remove starch (washing in a bowel is also fine if limited water supply)
- Heat a little fat to the pan (butter or oil), add the rice and coat with the fat.
- Add the dried thyme and drained beans
-Pour the same amount of boiling water to rice
-Pour the same amount of coconut milk, so you now have double the liquid to the rice
-Bring to the Boil - continue boiling until surface liquid has dissapeard and the rice has air pockets forming on the top.
-Cover, turn the heat to the lowest setting and cook for a further 15mins.

Best enjoyed with friends and a few bottles of cold Red Stripe!
