I really like the quote “A journey is best measured in friends, not in miles. ”
In my opinion staying with locals is the best way to get to know a city and a culture. The more you talk with the locals the more you get to know the heartbeat of the city. Additionally you can discover some hidden spots which are most of the time better than the main sightseeing spots.
