About Me

I’m Litu Mohiuddin—a British Bangladeshi chef and food writer on a mission to deconstruct curry in order to decolonise it.

Imagine this: you have a bowl of curry in front of you—any country, any version—and a world map beside it. Remove the spices and herbs one by one, placing each back on the map where it originated. Suddenly, you’re tracing the old maritime spice routes, intertwined with colonialism, the slave trade, and indentured labour migrations. Out of that displacement, people recreated their food through memory—turning curry into a story of survival and innovation.

That’s the heart of my journey. Since June 2024, I’ve been traveling these historic routes—from South Asia and East Africa, through the Middle East and Europe, to the Americas and now the Caribbean—researching my upcoming book, -From Kari to Curry. It explores how spices and people carry stories across borders, blending my background in sustainable, migration-inspired cuisine (with past Michelin Guide features) into a no-waste philosophy.

But here’s the twist: what does decolonising curry really mean—and why does it matter now? A book is one path, but there are so many more.

I’m relatively new to Couchsurfing, but it’s already been essential—especially in the U.S., Mexico, and the Caribbean, where genuine connections and shared hospitality shine. I carry a small pouch of spices gathered along the way, cooking simple, soulful meals with hosts and exchanging stories that make this journey resourceful—an opportunity to relearn, which has become my prayer.
