My recipe for Traditional Chinese Tea Eggs!!

2.5 Star Anise
Two handfuls Chinese Tea (Dark brown teas like Wu Long work the best)
One handful Sezchuan Red Peppercorns
One handful Fennel seed
One stick of cinnamon
2 tablespoons soysauce
2 teaspoons of brown vinegar
4 teaspoons of sugar

Boil eggs for two to five minutes in a sauce pan and remove the water. Quickly cool the eggs with cold water and crack the shells of the eggs gently by dropping them against the pot quickly. This will allow the flavors seep into the egg and create the signature marbled design of the tea egg. Then add water to cover eggs as well as all ingredients for the stew. Heat and simmer eggs in mixture on medium heat for a total of 10 minutes, stirring once or twice to even the flavors. Allow to cool before transferring eggs and sauce to a storage container to refridgerate overnight to marinate.
Serve with rice or have them as a snack. Peeled eggs have a beautiful marbled design from the dark sauce and the eggs should taste savory and fragrant. These eggs can be stored for about a week - that is, if they last that long.
