PHILOSOPHY

COUCHSURFING EXPERIENCE

i travel around the USA with my band and we often find ourselves taking advantage of the hospitality of both friends and strangers. It's really become one of my favorite parts of what i do. I've gotten to meet such amazing people and pets, enjoy some wonderful cooking, and hear some amazing stories. It beats the hell out of cheap motels.

i was trying to think of some sort of music lesson i could put here... then i was thinking some philosophical knowledge i could impart, but instead, i offer to the world my recipe for the greatest grilled cheese sandwhich ever. It's cheap, and easy to make... it's always a big hit when i make it for people who host me or my band.

2 slices bread (I prefer a sweet bread like Hawaiian bread or challa, but any kind will do as long as it's solid enough to hold the egg/milk)

1 large egg

1 Tbsp milk or cream

Cheese – I like to use a mix of cheeses -- jack, meunster, mozzarella, blue cheese, goat cheese and brie are my favorites.

A couple pinches each of rosemary, basil, oregano, thyme, black pepper
Optional: slice of turkey or ham, roasted red pepper, sun dried tomato.
1 Tbsp olive oil

Beat the egg with the milk… dip each slice of bread just long enough to coat the surface (you don’t want it to be too soggy) sprinkle each side of bread with the pepper and herbs
Heat the olive oil in a small skillet over a low flame.
Fry both sides of one slice of bread until one is golden brown and the other is a bit underdone.
Assemble your fillings on top of the golden side while frying up one side of the second piece of toast.
Here’s the tricky part… yak gotta close the sammy leaving the uncooked side of the bread face up.
Put the covered sammy back in the skillet and complete cooking both sides of the toast until they are golden brown and the cheese is all nice and melty.

Cut and enjoy!!
