ABOUT ME

I'm a writer, an editor, a farmer, and a baker. I imagine I will end up with more unexpected careers in my life. I'm alternately adventuresome and domestic. I'm an avid reader of almost anything I can get my hands on. Possibly my favorite thing to do is take long, cold walks in the winter and then end up somewhere with something hot to drink...or good beer. I dislike grammar snobbery , and have no patience for haterism (i.e. homophobes, racists, misogynists, etc).

One Amazing Thing I’ve Done

Basic bread recipe:

3 cups flour (wheat, white, or a mix)
1/2 cup warm milk (whole, 2%, goat, or soy)
1/2-3/4 cup warm water
4 tbsp olive oil
2 tbsp sugar, honey or molasses
1 tsp salt
2 tsp dry active yeast or instant yeast

1) Add the yeast, sugar and warm water in a glass and stir. Let sit 10 minutes (instant yeast doesn't need to sit, you can just throw it in with the flour).
2) Sift together the flour and salt. Add all of the other ingredients and mix it up! Knead it on a floured surface for at least 10 minutes, until the dough feels both tacky and soft.
3) Roll it into a ball and smooth a little olive oil over the surface. Put it into a mixing bowl, cover with a damp cloth, and put it in a warm, draft -free spot for an hour. It should double in size.
4) Mold it into a log and transfer it to a bread pan. Or, you can make a free standing loaf. If you do the later you can score an X into the top. Let it rise for another hour.
5) Bake at 350 degrees F for 35-40 minutes. Let cool. Eat fresh out of the oven for maximum pleasure.

This is a great base, so you can do anything to alter it--add herbs, seeds, chunks of garlic, an egg for a crusty crust. If you don't have any milk, just use more warm water. Double it to make 2 loaves at once.
